Very Veggie Wraps with Ginger Cashew Butter

Veggies getting ready to rock and roll

  • 1 Cup Raw Cashews
  • Juice of 1 Lemon
  • 1 TBS Fresh Grated Ginger
  • 1 Mango, Julienned
  • 1 Zucchini, Julienned
  • 1 Cup Sweet Peppers, Juienned
  • 1 Cup Broccoli Sprouts
  • 2 Cups Spinach
  • ½ Cup Sun Dried Tomatoes, sliced thinly
  • 4 Large Collared Green Leaves, large stems removed

Soak cashews in enough water to cover for one hour. Drain and blend with lemon juice, ginger, and 1 TBS water until smooth and creamy.

Ginger Cashew Butter

Spread this butter evenly amongst the collard greens. Lay the mango, veggies, and sprouts over the cashew butter.

Very very veggie!!

Fold the edges of the collard green leaf over, and roll up like a wrap.
